The grapes were harvested during the cooler nighttime hours and then processed by crushing, destemming, and pressing. The resulting juice underwent a light clarification process before undergoing fermentation at a cool temperature for a duration of 10 days. The wine also underwent a secondary fermentation using the innovative Chamat method, which involves fermenting the wine in a stainless steel pressure tank. This method reduces processing time and effectively captures the bubbles through carbonation.

Due to its secondary fermentation in the tank, this wine showcases the characteristics of cool climate Chardonnay fruit, accompanied by subtle notes of bread and brioche from the lees contact. On the palate, the wine offers a refreshing and vibrant experience, with hints of white peach and citrus, and a delicate creamy finish. Its notable acidity makes it an excellent choice as an aperitif, perfectly preparing the palate for a meal.

This sparkling wine is suitable for any occasion, but particularly lends itself to celebrations and pairs wonderfully with freshly shucked oysters. Additionally, it is vegan-friendly.
