Like most alcoholic drinks, the point of making cider wasn't necessarily to get drunk and have a good time. Traditionally, the first thing that humans tend to mess up when they settle down in a new area is the local drinking water. Fresh water found in wells, rivers and lakes could be quickly infected by the by-products of urban living like commercial waste from factories. In the ancient world, there wasn't much in the way of industrial factories, but fresh water was still dicey to trust. When all of the juice has been extracted, its placed inside barrels where it is exposed to yeast strains and left to ferment. While fermenting at lower rather than warm temperatures, stronger natural flavours will develop because this slows down the fermentation process and allows the natural contours of the raw juices to emerge. The final product is usually ready to drink within a couple of months of complete fermentation but can also be aged to develop more complexity.
