But if you've come first for the pear cider, then let's take a closer look at this deliciously sweet and alcoholic favourite. Hard cider is the term used to describe an alcoholic drink made from fermentation of apple and pear fruit juices. Well, it's the term most used in America where soft cider is more common. Elsewhere in the world, cider means an alcoholic drink.
Like most alcoholic drinks, the point of making cider wasn't necessarily to get drunk and have a good time. Traditionally, the first thing that humans tend to mess up when they settle down in a new area is the local drinking water. Fresh water found in wells, rivers and lakes could be quickly infected by the by-products of urban living like commercial waste from factories. In the ancient world, there wasn't much in the way of industrial factories, but fresh water was still dicey to trust. To counteract this problem, humans very quickly worked out how to ferment certain juices. One of those juices was made from grain mash of malted barley or a similar type of grain like rye or wheat and turned into beer. Another one of those juices was apple and pear juice.
There's evidence to suggest that the Romans and the Greeks were big fans of sweet cider a few thousand years ago. When the Romans arrived in England, they found the henge-building pagans also firm fans of apple and pear cider too. Working out how to take very sugary fruit juice, collecting some wild natural yeast, putting the two together and leaving it alone for a while was something humans apparently found very easy. The recipe, while pretty simple, was also ripe for experimenting with.
Fast forward several thousand years and we arrive in the twenty-first century and one of the biggest boutique beer and cider making periods in the history of humanity. There are thousands of cider makers carefully crafting their own expert pear cider recipes, taking all kinds of natural flavours and developing some of the most amazing taste profiles. We've collected as many as we can and are excited to introduce you to the wealth of both Australian and international pear cider or perry, as it's also known.
When it comes to making pear cider, you'll probably be surprised to learn that it's not super sweet fruits that a cider maker goes looking for. Like apple cider, the fruit you need to make good pear cider looks and tastes nothing like the fruit you'll find on the shelf in your local fruit and veg shop. The fruit must have the perfect balance of sugar content and tannin content to develop into a rich and complex tasting cider. Like beer and wine, the juice of the pear is squeezed out of the pulped fruit. Once the pears have been pulped, they are traditionally placed in large hessian covered squares known as cheeses and stacked on top of each other inside a cider press. Once the desired level of cheeses has been stacked, the press wound down and the juice is extracted under immense pressure.
When all of the juice has been extracted, its placed inside barrels where it is exposed to yeast strains and left to ferment. While fermenting at lower rather than warm temperatures, stronger natural flavours will develop because this slows down the fermentation process and allows the natural contours of the raw juices to emerge. The final product is usually ready to drink within a couple of months of complete fermentation but can also be aged to develop more complexity.
Drinking pear cider is as much fun as making it and it's a versatile little fruit flavoured tipple. You can enjoy it hot in the dead of winter for a special soul warming experience. You can enjoy it ice cold in high summer to quench a serious thirst and keep you cool. Being naturally high in sugar content, you can expect some calories to come with your pear cider, although, we are seeing more and more calorie conscious brewery styles emerging that offer the same amazing taste but as a non-alcoholic beverage, low cal and mid strength.
