For the first time we have a rosé, a super-pretty little number, barely messed with and made with refreshment in mind. 100% Shiraz fruit was macerated on skins for just one day and then pressed to oak for fermentation. A cool (14-18C) natural fermentation kicked off, was allowed to warm at end of ferment and moved to stainless steel to preserve freshness. Élevage on lees for two months prior to racking and bottling in May. Unfined and unfiltered
