Elysian Springs Spring Lamb Syrah 750ml

The name pays homage to the Dorper and Wiltipoll sheep and their progeny that effectively control the winter weeds. Estate-grown Shiraz bunches, handpicked at their optimal ripeness, are put through a meticulous process. A quarter of the harvested bunches are placed in open-top fermenters while the remainder is destemmed and added to the mix. A cool fermentation process is undertaken, followed by a maceration period of 21 days. Following the completion of malolactic fermentation, the mixture is pressed off and returned to the tank for settling. The resulting wine is then matured in a mixed selection of seasoned French and American oak hogsheads. It is subsequently bottled directly without fining and with minimal filtration, ensuring the preservation of the pure taste and texture of the Syrah. In keeping with authentic Australian tradition, it is recommended to pair this wine with a Spring Lamb roast.
