Elysian Springs Pennies From Heaven Sauvignon Blanc 700ml

This wine is named in honour of the much cherished winter rains which fall like ‘pennies from heaven’, replenish our soils and allow the vines to flourish during the growing season. Whole bunches from our most distinctive Sauvignon Blanc vineyard were hand selected and picked in the cool of the early morning then destemmed without crushing the fruit. Gentle pressing followed and the free run juice was then fermented in small stainless steel tanks between 12 to 14 degrees Celsius, ensuring the lively white grapefruit flavours and aromas were retained. It was then bottled directly thereafter without fining and with minimal filtration to capture the purity of taste and texture. - Elysian Springs
