VINEYARD
The vineyards are near Sambuca di Sicilia and are 15 years old. They surround Lago Arancio (Lake Arancio) which was once a river forming a valley. The soil profiles are quite deep towards the lake and composed of ancient marine fossils. The vineyards are North facing meaning a cooler exposition. Afternoon sea breezes from the South-West provide further essential cooling.
WINEMAKING
Fruit is destemmed and fermented in small one-tonne fermenters. Fruit remains on skins for 10 days before pressing to 2000 litre French oak casks.
TASTING
Dark red in colour, the palate shows dark plum and aniseed notes infused with mountain herbs and hint of spice. A wonderful tannin structure make this a delicious vintage.
Hairydog Team Notes: The wine is still quite deep and brooding but with some bright fruit and a slight sarsparella hit on the nose.
