The history of sparking rose is still a bit of a contested mystery but what is absolutely agreed upon is its country of origin: France. Champagne was not created by design, but instead by accident. Bubbling white wines were actually considered products of a flawed fermentation process and not really consciously understood or designed for mass production until the nineteenth century. The Champagne region of France was renowned for cold weather which sometimes did not allow for regular fermentation. Yeast strains used in the region for the production of wine required warmer weather and conditions to complete the fermentation process while in the cask so when the wine was bottled sometimes a secondary fermentation would take place once the weather warmed up a bit and the yeast, which had grown dormant in the cold, awoke again to finish what they'd started.
The result of this second fermentation was trapped bubbles of carbon dioxide inside the wine bottle that would frequently explode because it was unable to take the pressure build up. Whole wineries could lose up to 90% of their bottled wine when this happened as a chain reaction would often start, ripping through rack after rack of bottles. Bubbles were considered disastrous. That was until the English started developing a taste for them.
As champagne began to pick up in popularity amongst the rich and the elite, wine producers started to catch up too and the method for delivering consistent bubbles in bottles that could handle the pressure was firmly established by the beginning of the nineteenth century, in time for the Industrial Revolution and the rise of the bourgeoise, who also liked a bottle of bubbly. Coalfired glass made in England was usually stronger than the glass made in France, so this helped to design a designated champagne bottle. Next came the recipe and the exact amount of sugar required to ensure consistent second fermentation, and therefore a good bottle of bubbles.
The creation of sparking Rose and champagne rose is largely considered to occur around this time too with Vevue Clicquot credited to have been the first house to mass produce the style. It was made by blending Pinot Noir with Meunier, Chardonnay and a specially grown red wine grape to create a light rose wine. There is talk that Ruinart was also selling a variety earlier but Ian Fleming popularised Vevue Clicquot with James Bond, having him drink it in three separate books. Today there are a range of different blends and styles available including Australia's De BortoliProsecco as well as sparkling Moscato blends renowned for delivering a light and sweet, full-bodied flavour. Cooler climate grapes are generally considered fruiter and sweeter while warm climate varieties deliver complexity and body.
Australian producers of this beautiful style include Chandon and Jacobs Creek with international champagne rose favourites like Moet, Mumm and Krug still ranking as all-time winners. Enjoyed in a flute and delivering slightly less calories than a glass of non-bubbly white or red wine, sparkling rose is a stunning little surprise well worth trying.
