100% Whole Bunch ferment in open pot fermenter. Five days carbonic maceration and ferment, during which the fermenter was wrapped up to retain CO2 and carbonic characters. First stomped when ferment was down to 9.6Be. Pressed off when dry for sugar on day 12 in open pot fermenter to neutral French oak hogsheads. Matured in hogsheads for 5 months, prior to racking in settling in tank prior to bottling unfiltered on 17 August 2021.

Packaged in clear glass to showcase fresh, vibrant colour and the minimal interventionist winemaking.
