Tasting Notes:

Color: Deep, dark, and vibrant

Nose: A classic aroma profile that is instantly recognizable, with hints of formic and glacial notes. It possesses a touch of heady spirit reminiscent of Cognac, but also displays a complex oaked nuttiness in the background. Subtle hints of black licorice, anise, and black olive further enhance the bouquet. As you delve deeper, you'll uncover aromas of condensed glazed fruits, followed by a fresher essence of berry and stone fruits, as well as boiled beetroot. Notes of coffee grinds, pan-scrapings, and jus add complexity, floating above a base of cold lamb fat and marrow. With time, a sprinkle of lavender and exotic spices make an appearance, completing the aromatic experience for a few more minutes. Truly, it is still in its early stages of development.

Palate: The South Australian blend showcases superb cohesion, vigor, sheen, and poise. It is a well-structured wine that perfectly balances freshness and complexity. The palate offers lively blueberry notes and other youthful blue/black fruits, revealing that this blend still has room to mature. The presence of barrel-ferment characters is more pronounced on the palate compared to the nose.

While the mid-palate is robust and supports a thick and dense core, the back-palate is smooth and delightfully embracing. It possesses an expansive and full-bodied nature that washes over the palate, leaving a lasting impression. The wine exhibits remarkable persistence and showcases chewy, grainy tannins, and a perfectly balanced acidity that enhances succulence and mouthfeel. It effortlessly handles its 19 months of aging in 100% new oak barrels.
